Greek Recipes That Start With Great Olive Oil
Great olive oil is the foundation of Greek cooking — used raw as a finishing oil as often as it’s used to cook. Here are a few simple, traditional ways to use it.
Simple Greek Salad (Horiatiki)
Tomatoes, cucumber, red onion, Kalamata olives, and feta, dressed generously with EVOO and a splash of red wine vinegar. No lettuce — that’s the traditional version.
Ladolemono (Lemon-Olive Oil Sauce)
Whisk EVOO with fresh lemon juice, oregano, and a pinch of salt. Use it over grilled fish, vegetables, or roasted potatoes.
Fasolada (Greek White Bean Soup)
A simple soup of white beans, carrots, celery, and tomato, finished with a generous drizzle of raw olive oil just before serving.
